🍃Zing Rotini Salad🍃
3 cups of Spinach Rotini
1 cup of Kalamata Olives (sliced)
1 cup of Spanish Olives w Pimento (sliced)
1 cup of Sun Dried Tomatoes (sliced)
1 1/2 cup of Feta/Goat Cheese
1 cup of Shallots/Vidalia Onions minced
1 cup of Sun Dried Tomato Pesto (pre made)
2 tbsps of Cherry Balsamic Vinaigrette Glaze
1 pinch of Red Pepper Flakes
11/2 cups of Chicken/Vegetable Broth
1) In a medium sized sauce pot add your Chicken Broth (11/2cup) on a medium flame. Bring broth to a rolling boil, then add Rotini Pasta. Boil until all broth is absorbed by the Pasta (no draining broth). Set aside to cool and reserve for mixing into salad.
2) In a medium sized bowl add Onions, Sundried Tomatoes, Black & Green Olives w Pimento, Red Pepper Flakes and Feta/Goat Cheese. Give it a good stir.
3) Now add your cooled off Pasta, Sundried Tomato Pesto, Balsamic Vinegrette Glaze to the previous ingredients and give it all a good stir to mix and coat the Pasta and other ingredients in Flavor!! Now take it to the fridge because you want to serve it chilled.
4) Now plate with a bit more Balsamic Glaze and serve. I always like to add a bit more cheese and olives and a Verde Sauce for a lil extra spice.
