NZINGHA’s Coconut * Cucumber * Lime * Mint Coolah

I think this is one of my favorite drinks of my “Coolah” Series. Something about Cucumbers is just so refreshing, especially on a hot day. I usually pair this drink with a really spicy dish like the Bassa Fried Nuggets here in the above picture.

This drink is just enough to cool the palate after the heat of a spicy dish. Not to mention that it’s a got a clearing of the mind effect with the additional Mint in the mix!! It reminds me of one especially hot day in Virgin Gorda as I’d had my own private picnic (which I’d done often as a ritual of love for myself).

I prepared a lunch bag, beach towel, bathing suit and beach togs. I made myself an Appetizer of my St. Thomas Cevice, and a dish of Caribbean Fried Rice and Salad. Boy was it hot out there!! I bought 2 separate containers of Coolah (glad I did that!). It was so hot out I couldn’t even eat I literally guzzled half the container of Coolah,…my body temperature immediately became stable and balanced!! Not only that but it just tasted good!!!

🍃Coconut * Cucumber * Lime * Mint Coolah🍃

Prep time: 15 minutes
Yield: Makes about 1 quart

*****INGREDIENTS*****
1 lb of Cucumbers (cleaned and coursely chopped)
1 cup of Fresh Squeezed Lime Juice from fresh limes
1 1/4 cup of Mint Leaves (about a large handful), woody stems removed
1/2 cup Sugar
1 1/4 cup of Coconut Water

*****GUIDE*****

1 Add all of your ingredients to the blender, add enough water to fill 3/4 of blender. Hold the lid on the blender and purée until smooth.

2) While blending get a medium sized sieve to filter as you will only want your juice and not the fibrous materials from your ingredients.

3) Now use your sieve over a bowl and pour the purée through it, pressing against the sieve with a rubber spatula or the back of a spoon to extract as much liquid out as possible.

4) Now after filtering your mixture find a clean dry pitcher, glass preferably as you will want to show off the lovely almost neon green colored juice. Fill a large pitcher halfway with ice cubes and the juice.

5) Decorate your glasses with sprigs of Mint, Cucumber and Lime slices.
